A hearty bowl of pumpkin soup can easily be a go-to starter for a dinner party, a delicious, creamy lunch or a light supper when you need a bit of comfort. It has a lovely silky texture, unique flavors of garlic and red onion, and the goodness of vegetable stock, pumpkin and milk.
Ingredients
- 1 kilo fresh pumpkin
- 100 gr red onion
- 40 gr fresh garlic
- 100 ml Me n’ Mil
- 1.600 ml vegetable stock
- 40 ml olive oil
- Fresh mint leaves
- Salt and pepper
Instructions
- Cut fresh pumpkin and red onions into medium-sized cubes, and grind the garlic.
- Throw them in a saucepan with the olive oil and sauté at medium heat for 10’.
- Make the vegetable stock, strain it and add it in the saucepan.
- Let it simmer for 30’ with closed lid.
- Remove the lid and simmer for another 10’.
- Remove from heat and add fresh mint leaves.
- Use the hand blender to blend all the cooked ingredients and season with salt and pepper. Bon appetite!
