Try pumpkin soup with Me n’ Mil!

A hearty bowl of pumpkin soup can easily be a go-to starter for a dinner party, a delicious, creamy lunch or a light supper when you need a bit of comfort. It has a lovely silky texture, unique flavors of garlic and red onion, and the goodness of vegetable stock, pumpkin and milk.

Ingredients

  • 1 kilo fresh pumpkin
  • 100 gr red onion
  • 40 gr fresh garlic
  • 100 ml Me n’ Mil
  • 1.600 ml vegetable stock
  • 40 ml olive oil
  • Fresh mint leaves
  • Salt and pepper

Instructions

  1. Cut fresh pumpkin and red onions into medium-sized cubes, and grind the garlic.
  2. Throw them in a saucepan with the olive oil and sauté at medium heat for 10’.
  3. Make the vegetable stock, strain it and add it in the saucepan.
  4. Let it simmer for 30’ with closed lid.
  5. Remove the lid and simmer for another 10’.
  6. Remove from heat and add fresh mint leaves.
  7. Use the hand blender to blend all the cooked ingredients and season with salt and pepper. Bon appetite!
